Ingredients:
- 2 Β½ pounds of starchy potatoes, peeled and finely grated, drained of liquid
- 1 small onion, peeled and diced finely
- 2 eggs, beaten
- ΒΌ to Β½ cup flour (use smaller amounts until desired consistency)
- 1 tsp salt
- Oil for frying (I prefer vegetable oil)
Directions:
FIRST STEP: After grating the potatoes, make sure to drain off all the liquid. You can do this by using your hands and a colander or by placing the potatoes in a towel and wringing the liquid out.
Place the drained potatoes in a medium-sized bowl and add the flour, onion, eggs, and salt. Stir everything together until combined well.
SECOND STEP: Heat a skillet with a neutral-flavored oil over medium to medium-high heat. Using a measuring cup or ladle, pour approximately β cup of the batter for each cake into the heated oil. If needed, flatten with the back of a spoon.
THIRD STEP: Fry the pancakes on each side until golden brown and crispy. Once done, place them on a paper towel to drain any excess grease.
