Brighten your day with these zesty Lemon Crumb Squares! They’re sweet, tangy, and oh-so-delicious!

Ingredients:
1 cup all-purpose flour
1 cup old-fashioned oats
¼ teaspoon salt
¾ teaspoon baking soda
10 tablespoons unsalted butter, melted
½ cup packed light brown sugar
1 teaspoon pure vanilla extract
1 (14 oz) can sweetened condensed milk
2 tablespoons sour cream or plain yogurt
1 large egg yolk
¼ cup freshly squeezed lemon juice
1 heaping tablespoon finely grated lemon zest
½ teaspoon vanilla extract

Directions:

  1. Preheat your oven to 350°F. Line an 8×8-inch pan with parchment paper or foil, leaving some overhang. Give it a light spray with nonstick spray.
  2. In a mixing bowl, combine the flour, oats, salt, and baking soda.
  3. In another bowl, whisk together the melted butter, brown sugar, and vanilla extract. Then stir in the dry ingredients until well combined.
  4. Set aside ¾ cup of the dough for topping. Press the remaining dough firmly into the bottom of your prepared pan.
  5. Bake the crust for 10 minutes to give it a nice start.
  6. While the crust cools, whisk together the sweetened condensed milk, sour cream (or yogurt), egg yolk, lemon juice, lemon zest, and additional vanilla extract until smooth.
  7. Pour this delicious lemon filling over the baked crust and spread it gently to cover.
  8. Crumble the reserved dough on top of the filling.
  9. Bake for an additional 17-20 minutes, or until the top is golden and the filling is set.
  10. Let it cool completely in the pan before slicing.
